The Antioxidant Power of Freshly Juiced Carrots

This little veggie never ceases to amaze. Carrots are responsible for many, many antioxidants a few being: vitamin A, C & B6, but what is it most famously known for? Beta-Carotene! A carrot’s high concentration of this amazingly potent antioxidant (beta-carotene) makes this vegetable one of the top 10 cancer fighting foods out there.

About Beta-Carotene

Yes, carrots are rich in beta-carotene, and we do mention that antioxidant quite frequently throughout this website, but really, what is it? Excellent question!

Beta-carotene is a part of the cartenoid family contributing to the pigment found in most fruits and vegetables.

Beta-carotene is primarily responsible for the orange pigment found in different fruits and veggies, but can also be found in red, yellow and green colored produce. And as you can see carrots are an excellent source of beta-carotene due to their intense orange color.

Why are Carrots so good for the Eyes?

Everybody says eat at least three carrots a day for healthy eye sight…right? We’re sure you’ve heard it before, but is it true! Well, if you actually eat the carrots, they are good for your eyes because…of the beta-carotene! Yep, that’s right beta-carotene helps to protect vision, especially night vision.

It works like this: once consumed beta-carotene is converted by the liver into vitamin A and is absorbed by the retinal cells in the eyes. The powerful antioxidants in beta-carotene provide protection against macular degeneration as well as protecting against free radical damage thus promoting healthy eye sight.

How to Use Juiced Carrots in a Smoothie

Use as your liquid base. Instead of a cup of water, try a ½ cup freshly juiced carrots and a ½ cup water as your liquid base.

Also, when using juiced produce be sure to tailor your recipes around whatever piece of produce you have juiced’ because, you want flavors to blend not clash.

1 cup mango

¼ cup carrot-juice

½ cup yogurt, vanilla

½ apple, seeded

½ cup ice

1/8 cup cranberries

½ cup carrot-juice

½ cup pineapple

1/8 cup orange juice

1 banana

½ cup yogurt, vanilla

½ tbsp honey

1 cup ice

Super Carrot Smoothie

1 cup spinach

1 kale leaf

¼ cup orange juice

¼ cup carrot-juice

1 banana

1 cup berries * optional

Add ice as needed

A Regular V8 Juice Smoothie

4 carrots, baby

½ cup carrot-juice

1 tomato

Salt to taste

Pepper to taste

2 tbsp fresh lemon juice

Ice as desired

3 apricots, pitted

1 cup mango

¼ cup orange juice

¼ cup carrot-juice
