You might think that a cranberry smoothie would be tart and unappetizing, but….not so; tart, maybe but definitely appetizing!

And yes, there are other ways to use a cranberry other than in that “famous, yummy” sauce next to the turkey on Thanksgiving Day. If you are having trouble “downing” a green smoothie and need to either sweeten it up or add a little kick to it, well, cranberries can definitely help you with that.

How to make Cranberry Juice

Fresh homemade cranberry juice is a popular drink often found on Swedish lunch tables, and probably soon, will be a favorite on your table as well.

After making your own cranberry juice, you will be a believer. It is pure, tasty, and the best part is: you can control the ingredients.

Most fruit juices are overly loaded with preservatives and sugar – so making your own juice is a good way to say: goodbye to overly sweet fruit juice and say hello to just right!

You will need:

2 cups water

1 tbsp lemon

4 cup fresh cranberries

1 cup granulated sugar

Directions

1) Add your water, lemon juice and cranberry juice to your blender & blend for 2 to 3 minutes or until a thick liquid is achieved – with no chunks.

2) Next, place your blender or a lidded container with the juice in it, in the refrigerator and allow it to steep overnight. In the morning remove the container, and strain the cranberry juice using a fine mesh strainer into a saucepan (medium) Throw out any solid chunks.

3) Next, add your sugar (1 cup) to the saucepan and heat to medium for 1 to 2 minutes – or until the sugar is dissolved.4) Next remove your saucepan from the heat and add 1 cup of cold water. Depending on your taste you can add more or less. (Less water will give you a sweeter cranberry juice)

5) Next, pour into a pitcher of your choice to chill in the refrigerator, and enjoy!

Cranberries contain both vitamin C and fiber with only 45 calories per cup. As far as the antioxidant scale goes cranberries outrank all most every fruit and vegetable, including: spinach, grapes, raspberries and strawberries.

Antioxidants play an important role in the function of our body, helping to fight against and neutralize the damaging effects that free radicals have on the body.

Vitamin E is another one found in the cranberry. This vitamin plays a role in producing red blood cells and helping to maintain the immune system.

Vitamin K is another essential vitamin found in this little berry. K is also known as the clotting vitamin. For example, when you get a simple cut, the blood will eventually clot – this is V-K at work. Without K we would run the risk of bleeding to death even from just a simple cut.

*Caution – if you have a problem with blood clotting and are on any blood thinners vitamin K can interfere with the medicine. Check with your doctor to see if you can have cranberry juice.

1 cup raspberry yogurt

2/3 cup water or almond milk

1 banana

½ cup fresh cranberries

1 cup milk or as a substitute you can use almond milk

Blueberry Cranberry Smoothie

1 ½ tbsp honey

½ blueberries – fresh or frozen

½ cup cranberries – fresh or frozen

8 oz fruit juice

½ banana *optional

½ cup ice

The Ultimate Cranberry Smoothie

½ cup cranberries

1 banana

2 madjool dates – pitted

1/2 cup cranberry juice

2 clementine’s – pitted and seeded

¼ tsp cinnamon

¼ tsp vanilla extract

½ cup ice

Directions

Blend in your blender until smooth and enjoy!

Green/Cranberry Smoothie

½ cup cranberries

1 cup spinach

½ stalk celery

2 madjool dates to sweeten – pitted

1 banana

5 oz water

½ cup ice – add more if needed or desired
